The UMU Dean Gaspar Ros, presents a cookbook based on the novel field of Nutramolecular Gastronomy (22/11/2017)

On Thursday, November 23, at 7:30 pm, the book "Gastronomy versus nutrition", by Isabel Goñi and Joaquín Pérez Conesa, will be presented in the auditorium of Cajamar (Plaza de Romea). Gaspar Ros Berruezo, Dean of the Faculty of Veterinary Medicine of the University of Murcia.

It is a pioneer book in the new field of Nutramolecular Gastronomy.

The publication contains 126 recipes of the most representative traditional dishes of 17 Spanish Autonomies.

For a better understanding, the culinary processes of its elaboration are represented in diagrammed form and explained rationally.

The nutritional information given for each recipe is evaluated so that the reader knows the beneficial or counterproductive effect that the ingestion of a ration would have on their health.
